One of the things I miss following a dairy free diet is creamy soup. I tend not to use dairy alternatives as they can have a lot of added extras, so I am always on the lookout for cream alternatives. Watching Hugh Fearnley-Whittingstall's new series I saw him use hummus in soup. Hmmm, interesting, what would it taste like? Well I've experimented and come up with the following recipe for Creamy Veg Soup. This recipe is based on Carrot and Green Leafy Veg, but I think it would work equally well with Cauliflower and Broccoli in place of the blue cheese that tends to be added.
