A friend of mine, who is vegetarian, came for Christmas dinner. I didn’t want to trot out something safe nor did I want to do a standard nut roast. So having looked at a few different recipes I created this veggie loaf. It is quite crumbly when just out of the oven, but tastes great, particularly with the Redcurrant Sauce. It’s also delicious cold and freezes well.
This is both dairy and gluten free, but if you do eat dairy you could add a grating of strong hard cheese (organic of course!) to the top.
