Apricot, Cashew & Coconut Balls

These 3 ingredient Apricot, Cashew & Coconut bliss balls are simple to make and taste great.  Apricots are an excellent source of vitamin A (in the form of pro-vitamin A carotenoids), and a good source of vitamin C, copper, dietary fibre, and potassium, Cashews give a dash of protein and good fats, whilst the Coconut adds a hint of lovely coconut flavour to tickle the taste buds.
